Ingredients
  

  • 1 pound hot Italian sausage
  • 1 tablespoon olive oil optional, for cooking sausage
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup beer lager or ale recommended
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1–2 tablespoons diced jalapeños or ¼ teaspoon cayenne pepper for extra heat
  • Garnish: 2 tablespoons chopped green onions

Instructions
 

  • Cook the Sausage: Heat a large skillet over medium heat. Add olive oil if needed, then crumble in the hot sausage. Cook for 5–7 minutes, stirring to break it up, until browned and fully cooked. Drain excess fat if necessary, then set aside.
  • Melt the Cream Cheese: In the same skillet over medium heat, add the cream cheese. Stir until melted and smooth, about 2 minutes.
  • Add Beer and Cheese: Slowly pour in the beer, stirring constantly to combine. Add the shredded cheddar cheese, garlic powder, and smoked paprika. Stir gently until the cheese melts and the mixture thickens, about 3–4 minutes.
  • Season and Combine: Season with salt and pepper to taste. Stir in diced jalapeños or cayenne pepper if using. Add the cooked sausage back to the skillet and mix well.
  • Serve: Transfer the dip to a serving dish, sprinkle with chopped green onions, and serve warm with tortilla chips, pretzels, or bread cubes.
