Ingredients

  • 1 large flour tortilla
  • ½ cup ground beef cooked and seasoned with taco seasoning
  • ¼ cup cooked white rice seasoned or plain
  • 2 tablespoons nacho cheese sauce
  • 1 tablespoon reduced-fat sour cream
  • 1 tablespoon creamy chipotle sauce
  • ½ cup shredded three-cheese blend cheddar, mozzarella, pepper jack
  • 1 tablespoon tortilla strips optional, for crunch
  • 1 teaspoon vegetable oil for skillet

Instructions

  • Prepare the Filling: In a small bowl, mix cooked ground beef, rice, nacho cheese sauce, sour cream, and chipotle sauce until well combined.
  • Assemble the Burrito: Lay the flour tortilla flat on a clean surface. Spoon the filling mixture into the center, leaving a 2-inch border. Sprinkle tortilla strips on top, if using.
  • Fold It Up: Fold the bottom of the tortilla over the filling, then fold in the sides. Roll tightly to seal, keeping the filling secure.
  • Add Cheese Topping: Sprinkle ¼ cup of the shredded cheese blend evenly over the top of the rolled burrito.
  • Heat the Skillet: Brush a medium skillet with vegetable oil and warm it over medium heat for 1 minute.
  • Grill the Burrito: Place the burrito cheese-side down in the skillet. Cook for 2–3 minutes until the cheese is golden and crispy.
  • Flip and Finish: Carefully flip the burrito and cook the other side for 1–2 minutes until lightly browned.
  • Serve: Remove from the skillet, let it cool for 1 minute, then slice in half and enjoy hot!
